Cultivation and all subsequent stages take place in compliance with organic farming methods that exclude any synthetic chemical product, both during the phase of the fertilisation of the soil and during pest-control.
It is the earliest vintage oil pressed during the first two days of the harvest, a micro-production of around 100 bottles, selecting the earliest possible time for the Dolce Agogia olive harvest, preserving in this way its maximum phenolic content.
The pressed oil doesn’t undergo any filtering process other than being poured into bottles.
It is highly recommended for quick consumption (exclusively raw), on bruschetta or in salad.
