Four 0,50 lt bottles of organic extra virgin olive oil from monocultivar olives: Moraiolo, Leccino, Dolce Agogia, Frantoio.
 
Characteristics
The cultivation and all subsequent processing stages take place in compliance with organic farming methods that exclude any synthetic chemical, for both the fertilisation of the soil and for pest-control. The olives are harvested from early October to mid-December and pressed within 8 hours of collection, using an unfiltered cold-extraction technique in order to preserve their qualities and their high nutritional value. 
 
Single varietal ‘Moraiolo’
Appearance: intense golden yellow with green notes, slight coating.
Smell: expressed in a medium, medium/high intensity, with complex hints of artichoke, wild thistle, and latterly, elegant hints of basil and mint fields.
Taste: rich and broad, full and bold, defined by intense green artichoke tones and harmonious closing notes of dried fruit. Bitterness and spiciness are both powerful and harmonious.
Pairings: excellent on carpaccio of raw meat, grilled shellfish, porcini mushroom soups, flavoursome main courses with vegetables, roasted fish, red meat stews and medium-aged cheeses.
 
Single varietal ‘Leccino’
Appearance: intense golden yellow with warm shades of green, light coating.
Smell: it opens on a medium, medium/high intensity, with clearly vegetal notes in which the artichoke and wild thistle stand out and with closing notes of basil and rosemary.
Taste: full-bodied and of good strength, characterized by green tones of fresh field herbs and strong closing notes of sweet almond. Bitterness and spiciness are moderate and harmonious. 
Pairings: ideal with appetizers of grilled vegetables, delicate marinated fish, creamed pulses, seafood mains, fried vegetables, steamed fish, roasted white meats and pulled curd cheeses.
 
Single varietal  ‘Dolce Agogia’
Appearance: intense golden yellow with delicate green tones, light coating.
Smell: presents a medium, medium/light intensity, offering elegant and strong fruited notes of unripe tomato, sour ‘Golden’ apple and a closing hint of almond. Complex, with subtle notes of artichoke, lettuce and closing notes of dried fruit.
Taste: harmonious and with character, defined by bold fruity notes of sweet almond and traces of fresh field herbs. Broad and powerful bitterness, moderate and well balanced spiciness.
Pairings: great on ovoli mushroom salads, steamed shellfish, chanterelle mushroom soups, vegetable-based mains, boiled fish, grilled white meats and fresh cheeses.
 
Single varietal ‘Frantoio’
Vista: intense golden yellow with green notes, slight coating.
Smell: presents a medium, medium/high intensity, characterized by determinedly vegetal notes of artichoke, wild thistle and strong hints of fresh mint and rosemary. Harmonious and bold with closing notes of dried fruit.
Taste: broad and strong, full-bodied and refined, with elegant tones of artichoke, fresh field herbs and harmonic closing notes of sweet almond. Bitterness and spiciness are bold and harmonious. 
Pairings: excellent on marinated tuna, porcini mushroom salads, flavoursome legume soups and main courses with shellfish, boiled fish, grilled red meats and seasoned cheeses."
